Panzanella Salad

Ingredients:
½ loaf focaccia croutons. See recipe below
2 cloves garlic chopped
1 red pepper medium dice
1 yellow pepper medium dice
1/3 red onion small dice
8 basil leaves torn or rough chop
3 Tbsp capers
2 large ripe tomatoes medium dice
1 can rinsed cannellini beans
1 container or ball of Buratta cheese
Generous drizzle of EVOO
Salt & cracked black Pepper to taste
2 Tbsp red wine vinegar

Croutons
Dice focaccia bread into medium/large croutons. Heat a large frying pan on Medium/Low, add a drizzle of EVOO or butter and toss around croutons with chopped garlic, S &P. Stir occasionally until croutons are crisp. Add more EVOO if desired.

Remove Buratta from liquid and set aside. Toss croutons and remaining ingredients in a large bowl. Dress with umami and a dollop of Buratta.
