Soba Noodle Salad
Yield= 5 ppl
Ingredients:
2 bundles Soba noodles (180g)
1.5c spiralized butternut squash
1.5c spiralized zucchini
1c julienne sugar snap peas
1 julienne red pepper
¼ julienne red onion
3 julienne radish
½ c crushed dry roasted peanuts
½ c crushed dried seaweed
3 Tbsp rice vinegar
1 Tbs maple syrup
1.5 Tbsp sesame oil
1.5 Tbsp olive oil S & P to taste
UMAMI
Directions:
Bring large pot of water to a boil. Add soba noodles and stir vigorously to prevent sticking together. Cook for 5 minutes and strain. Run under cold water to cool down quickly. Strain noodles and toss all ingredients in a large bowl, Season with Salt and pepper and drizzle with as much UMAMI as desired. ENJOY!
