UMAMI Curried Maple Cabbage Saute with Roasted Yam, Turmeric and Pickled Shallots
 

1/4 head medium green cabbage, sliced
1 small yam, peeled and diced
1/2 tsp turmeric
2 tsp sherry vinegar
1 tbsp extra virgin olive oil
1/4 cup stock or water
2 tbsp chopped cilantro (or any fresh herb)
salt & pepper
pickled shallots (recipe below)

Pickled Shallots
2 shallots, sliced
1/2 cup each apple cider & hot water
1 tbsp maple syrup
1/2 tsp salt
Combine all ingredients in a container with a cover and let stand while preparing cabbage

  • preheat oven to 400 degrees

  • peel and dice yam; season with salt & pepper and roast in oven for 15 min, turning after 10.

  • heat olive oil in a large pan and when hot, add cabbage and saute for about 3 minutes

  • to cabbage, add turmeric, stock, sherry vinegar, salt and pepper to taste; simmer for about 1 minute.

  • serve with chopped herbs, pickled shallots and roasted yam.
