UMAMI Harvest Soup (made with the Harvest Ready to Cook Salad Kit)

The Harvest Grain Salad Kit makes a delicious soup, too! A variety of vegetables in a hearty broth; full of good for you grains and finished with UMAMI Crave the Fifth Original. Simple and quick for crazy weeknight dinners and makes enough for lunch leftovers. We added roast beef but it’s not necessary; the carrots, tomatoes, rutabaga, parsnip, celery, onion and kale give it all the flavor you need for a wholesome meal.

1 cup each diced rutabaga, parsnip and carrot
1/2 onion, diced
2 ribs celery, diced
2 cloves garlic, chopped
2 cups roughly chopped kale leaves
1 litre stock (vegetable or beef)
2 cloves garlic, minced
1 - 28 oz can of diced tomatoes
1.5 tbsp olive oil
2 tbsp red wine or sherry vinegar
salt & pepper
10 oz piece of beef sirloin, small diced (optional)

makes about 8 cups

  • in a large saucepan on medium-high, heat olive oil. If using beef, sear the diced sirloin, generously season with salt and pepper, then add garlic.

  • if making a veggie soup, saute onions and garlic in saucepan for 2 minutes. Add carrots, celery, rutabaga and parsnip and cook for 5-7 minutes, until caramelized; season with salt and pepper.

  • add canned tomatoes and stock, bring to a simmer.

  • add Harvest grain blend, setting aside package of crunchy toppings.

  • simmer for approximately 15-20 minutes or until veggies and grains are cooked through.

  • add vinegar and chopped kale, stirring to combine; adjust seasoning if necessary.

  • serve with a drizzle of UMAMI Crave the Fifth and a teaspoon of crunchy topping mix
