UMAMI Garam Masala Soup (made with the Garam Masala Ready to Cook Salad Kit)

This soup, made using the UMAMI Garam Masala Ready to Cook Grain Salad, is full of vegetables and flavor. Ready to serve in about 20 minutes, we added carrots, celery, onions, cabbage, red pepper and peas but you can add vegetable you like!

1 cup fresh or frozen peas
1 medium onion, diced
2 ribs celery, diced
2 small carrots, peeled and diced
1/2 red pepper, diced
2 cloves garlic, minced
2 cups green cabbaged, sliced
2 tbsp olive oil
4 cups of stock
1 can coconut milk
2 tbsp red wine or sherry vinegar
salt & pepper

UMAMI Curried Maple
makes about 8 cups

  • in a large saucepan, heat 2 tbsp of olive oil over medium heat

  • add onion, celery, carrot and garlic to pan, drizzle with about 1 tbsp UMAMI Curried Maple and saute for 2 minutes

  • open salad kit, set crunchy package aside, and add contents of pouch to pot

  • add stock and simmer uncovered for 10 minutes, stirring occasionally

  • add coconut milk, stirring to combine, and then add cabbage, red pepper and peas

  • cook for an additional 2 minutes

  • add vinegar, season with salt and pepper

  • serve with a drizzle of UMAMI Curried Maple and a teaspoon of crunchy topping mix
