UMAMI Caramelized Onion and Pear Puffed Pastry Tart
These delicious tarts are prepared using a few simple ingredients; with the exception of the puffed pastry, you may already have everything you need in your pantry! You can always substitute with a pre cooked flatbread or frozen cauliflower pizza crust…these make great appetizers to share but who says you can’t have them for supper?

INGREDIENTS
3 Tbsp apple cider vinegar (divided)
1.5 Tbsp brown sugar (divided)
3 Tbsp olive oil
UMAMI Crave the Fifth (any) for a finishing drizzle)
salt & pepper
1 sheet puff pastry, thawed
1 large onion julienne sliced
1 pear medium diced
1/3 C finely grated parmesan cheese
2 Tbsp chopped parsley
METHOD
~cut 1 sheet of thawed but still cold puff pastry into 6-8 portions (you can cut again in half or quarters to have additional, smaller portions).
~place each piece on a parchment lined sheet pan and pierce each portion with a fork.
~bake at 375 for 5-10 minutes or until golden in color (ovens vary in cook times).
~remove from oven and reduce the baking temperature to 350 if planning to serve immediately.
~in a medium sized pan, heat 2 Tbsp olive oil on medium low.
~add the onion and slowly cook them down until they caramelize; stir every 5 minutes so onions cook evenly (this could take up to 30 minutes).
~once onions are caramelized to your liking, add 1 Tbsp brown sugar,
2 Tbsp apple cider vinegar and season with salt & pepper.
~continue to cook for an additional 3-5 minutes or until vinegar and sugar has dissolved.
~remove from pan and cool.
~in the same pan on medium heat, add 1 Tbsp olive oil and the diced pear and cook for 5 minutes or until lightly caramelized in color.
~add 1 Tbsp apple cider vinegar, remaining brown sugar and season with salt & pepper.
~cook an additional 3-5 mins or until vinegar and sugar has dissolved. ~set aside and cool.
(you can refrigerate everything separately up to this point and assemble the tarts as outlined below when ready to serve)
To assemble the tarts:
~place tarts on a parchment lined baking sheet
~smear each tart portion with caramelized onions and evenly distribute the caramelized pears on each.
~place tarts in oven at 350 for 5-7 minutes until heated through.
~place warm tarts on a serving tray or individual plates, sprinkle with chopped parsley, grated parmesan cheese and a generous drizzle of
