UMAMI Caesar Salad with Caramelized Smoked Tofu “Bakon” Bits

UMAMI Caesar Salad with Caramelized Smoked Tofu “Bakon” Bits

Ingredients:
1 large head of romaine lettuce, washed and torn
1/2 pkg smoked tofu, finely diced
2 Tbsp soya sauce
1 Tbsp maple syrup
3 Tbsp olive oil, divided
1/4 C capers, drained and patted dry
2 C bread, cubed
1-2 Tbsp nutritional yeast
1/2 Tsp each garlic powder & black pepper

Directions:

  • In a large frying pan on medium heat, add 1 Tbsp of oil

  • Add diced tofu to pan, toss to coat then add soya sauce and maple syrup.

  • Reduce liquid, stirring frequently, until tofu is caramelized and coated; remove from pan and set aside

  • Add 1 Tbsp oil to pan, heat and then add capers. Stir to coat with oil and fry until lightly crisped. Remove from pan and set aside.

  • Add final 1 Tbsp of oil to pan and when hot, add cubes of bread. Sprinkle with garlic powder and pepper. Stir periodically until all pieces are lightly toasted; remove from heat.

  • assemble salad: romaine, tofu bakon bits, capers, croutons, toss with UMAMI Chipotle Caesar; sprinkle with nutritional yeast and ENJOY!
