Zucchini Coins with UMAMI Crave the Fifth
Ingredients:
2 small zucchini, sliced in coins
1.5 Cups flour
1 C almond milk
1.5 Cups bread crumbs
2 Tbsp grated parmesan
1/2 tsp each oregano, garlic powder, onion powder
1/4 tsp paprika
Directions:
In 3 shallow bowls , mix the following:
#1. 1.5 cups flour(we used GF), seasoned with salt & pepper
#2. 1 cup almond milk whisked with salt & pepper
#3. 1.5 cups bread crumbs, (we used GF), 2 Tbsp finely grated parmesan (we used vegan parm), 1/2 tsp oregano, 1/4 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder.
Dredge each coin in each mixture and line on a plate.
Pan fry each coin in a non stick pan on medium heat in 2 Tbsp oil. Fry each side for 4 mins.
Air fryer: spray with EVOO or avocado oil, fry coins in an air fryer 4-5 mins each side.
